Refrigerator Pickles

I have too many cucumbers. Sometimes when I am confronted with this particular First World Problem, I make taziki sauce and serve it with falafel waffles. That’s another post for another time. 😉 Today, I’m making these refrigerator pickles. I’ve used this recipe before, and the result is lightly flavored pickle spears great for general snacking.

    Cucumber spears (about 3 cukes cut into spears)

    2 cups cold water

    1/3 cup white wine vinegar or other light, cheap vinegar (not balsamic)

    1 tablespoon salt

    2 teaspoons sugar

    5 whole peppercorns

    fresh ground pepper

    1-2 cloves garlic, sliced thinly

    optional flavor additions: fresh dill, jalapeno pepper, onion, habanero pepper, etc.

    Combine in a nonmetallic container to put them in, like a ziplock freezer bag or a mason jar. Refrigerate
